Processing


SVZ offers various processing opportunities such as juice concentrates, purees, concentrated puree and compounds, depending on your specific product requirements. Are you interested in a clear juice, or a product that gives mouthfeel and texture? SVZ owns six factories worldwide that provide an extensive array of processed fruit and/or vegetable ingredients.

Juice concentrates
Fruit and vegetable juice concentrates can be divided into two categories: cloudy and clear. Clear concentrates can be further sub-divided into ‘standard clear’ and ‘crystal clear’. ‘Crystal clear’ juice concentrate has been fully de-pectinized and clarified so that when mixed with alcohol there is no precipitation. These high quality juices are used in liquors and other alcoholic beverages. Volatiles from concentration are added back at the latest possible stage to the concentrate to maximize the aroma. Most vegetable juice concentrates are cloudy due to the application (beverages, soups). However there are exceptions to this rule; for example red beet juice concentrate which is a clear concentrate and is often used as colouring agent.
 
Puree (single strength)
The high quality of our purees is a result of a secure and safe sourcing chain where our own factories supply the raw material washed and chilled. Not only can we supply blended varieties, we can also process specific varieties from American cranberries to Polish Wild Blueberries. SVZ treats purees with a mild pasteurisation step in order to maintain flavour and aroma yet ensure food safety of the highest degree.
 
Concentrated puree
Focusing on red fruits and vegetables SVZ’s production process reaches a Brix level of around 30 whilst maintaining maximum pulp, viscosity, colour and flavour. Concentrated puree has become an ingredient in many compounds and preparations as the quality and advantages have been recognised. These include lower energy costs for preserve manufacturers who need to drive off water to increase solids levels through to reduced handling and packaging. 

Compounds
Compounding is more than just mixing. Over the years SVZ has developed knowledge on how the different fruits, vegetable and other ingredients inter-react when compounded. The flavour is essential as well as mouth feel and viscosity, which all play vital roles in any developed blend. Our developers are always making new and exciting blends and you can share in their experience and expertise.
